What is the Evolution display case and what kind of business is it designed for?

Evolution is a professional refrigerated display case designed for pastry shops, patisseries and coffee shops with an in-house bakery. It presents and preserves cakes, pastries and single-portion desserts while keeping the cold chain and an attractive display. The enbloc body is foam-insulated with injected polyurethane (38-40 kg/m³) and lined internally with stainless steel, on a tubular epoxy-painted steel base with adjustable feet.

What heights and widths are available for the pastry version?

The pastry version comes in two heights, H 120 and H 137 cm, and three nominal widths of 1150, 1650 and 2150 mm. The overall width depends on whether side panels are fitted: 115/165/215 cm without side panels and 123/173/223 cm with side panels. This makes it suitable both for compact spaces and for long display counters.

How does the shelving differ between the two heights?

The number of shelves depends on the chosen height. The H 137 pastry model is fitted with two display shelves, while the lower H 120 version has one. The greater height therefore increases the multi-level display surface, which is useful for wide ranges of mini pastries, cakes and single-portion desserts.

What materials make up the structure and the body of the display case?

The structure combines stainless steel and anodised aluminium. The body is an enbloc unit foam-insulated with injected polyurethane (38-40 kg/m³) and lined internally with stainless steel, a hygienic and easy-to-clean material. The base is in tubular epoxy-painted steel with adjustable feet for levelling.

How is the glass on the display case built?

The case is fitted with laminated, tempered and heated side glass and a tempered, heated front glass that opens downward. The top glass is extra-clear for a sharp view of the products. Heating the glass limits condensation, keeping the display clean and easy to read for the customer.

How does the case open for service and restocking?

The tempered, heated front glass opens downward, making service and product restocking easier. On the operator side, the case can be closed with a roller blind or with inclined sliding panels, depending on the configuration. Both solutions protect the pastries after hours and during loading.

How does the refrigeration and preservation system work?

The Evolution pastry version uses a ventilated refrigeration system with the evaporator installed beneath the display surface and automatic defrosting, distributing the cold evenly across the shelves. The electric control panel features an electronic thermostat for temperature control. The condenser is a single-phase hermetic unit, with automatic condensate evaporation on internal-motor versions.

At what temperatures and ambient conditions does the case operate?

The pastry version is rated climate class 3, referring to 25 °C ambient temperature and 60% relative humidity. It operates in temperature class 3 (M2 = -1 °C/+7 °C), in compliance with the UNI EN ISO 23953-2:2016 standard. It is therefore set for the positive-temperature preservation typical of pastry products.

How can I choose the motor configuration of the case?

The case is available with an internal motor or a remote motor. With the internal motor, the single-phase hermetic condenser unit is built in and the condensate evaporates automatically. With a remote motor, the unit is external and a condensate drain connected to the sewer line must be provided. The choice depends on space, noise and heat management in the sales area.

How is condensate water managed?

On internal-motor versions the condensate evaporates automatically, with no drain required. With an external motor, the condensate drain must instead be connected to the sewer line. A condensate evaporation tray is available on request. The front grille is not supplied on unfinished versions with an external motor.

What finishes and colours can I choose for the front panel and side panels?

The front panel and side panels can be lacquered in RAL shades or in the catalogue colour chart, so the case matches the décor of the venue. The side uprights are in black anodised aluminium and are set up to take laminate panels up to 2 mm thick, for further aesthetic combinations.

How is the display surface lit?

The shelves are lit by high-luminosity LEDs, which enhance the colours and detail of the displayed pastry. LED light delivers an even output with low consumption and heat compared with traditional sources, keeping products clearly visible without altering their appearance or affecting the preservation temperature.

What refrigerant gas does the case use and why?

On capillary internal-motor versions the case uses R290 refrigerant gas, a low-environmental-impact choice adopted by Frigomeccanica for sustainability. R290 offers good thermodynamic performance with a low global warming potential, in line with the company’s move toward more eco-friendly refrigerants.

How can I adapt the case to my workshop?
