What is the Evolution display case in the ice-cream version and who is it for?

Evolution ice cream is a professional refrigerated display case for gelato shops, designed to present and preserve ice cream in tubs while holding the negative serving temperature. The enbloc body is foam-insulated with injected polyurethane (38/40 kg/m³) and lined internally with stainless steel, on a tubular epoxy-painted steel base with adjustable feet.

What heights and widths are available for the ice-cream version?

The ice-cream version comes in two heights, H 120 and H 137 cm, and three nominal widths of 1150, 1650 and 2150 mm. The overall width depends on whether side panels are fitted: 115/165/215 cm without side panels and 123/173/223 cm with side panels. It suits both compact counters and long continuous displays.

How many ice-cream tubs does it hold and in which formats?

The case takes tubs in two formats, 36x16.5x12h cm or 36x25 cm with 12/8h depth, on position-adjustable cross-bars. With the 360x165x120 format the capacity is 24, 18 or 12 tubs depending on width; with the 360x250x80 format it is 16, 12 or 8. The set of tubs is not included.

What materials make up the structure and the body of the display case?

The structure combines stainless steel and anodised aluminium. The body is an enbloc unit foam-insulated with injected polyurethane (38/40 kg/m³) and lined internally with stainless steel, a hygienic and easy-to-clean material. The base is in tubular epoxy-painted steel with adjustable feet for levelling.

How is the glass on the ice-cream case built?

The case is fitted with laminated, tempered and heated side glass and a tempered, heated front glass that opens downward, with extra-clear top glass for a sharp view of the gelato. Heating the glass limits condensation, keeping the display clean and easy to read even with the case running at negative temperature.

How does the case open for service and restocking?

The tempered, heated front glass opens downward, making service and tub changes easier. On the operator side, the case can be closed with a roller blind or with inclined sliding panels, depending on the configuration. Both solutions protect the gelato after hours and limit temperature swings during loading.

How do refrigeration and defrosting work in the ice-cream version?

The ice-cream version uses automatic reverse-cycle defrosting, which manages frost on a programmed basis with no manual intervention. On internal-motor versions the condensate evaporates automatically. The system is designed to keep the negative preservation temperature of the gelato stable throughout the whole working day.

At what temperatures and ambient conditions does the case operate?

The ice-cream version is rated climate class 4, referring to 30 °C ambient temperature and 55% relative humidity. It operates in temperature class 4 (G1 = -10 °C/-14 °C), in compliance with the UNI EN ISO 23953-2:2016 standard. It is therefore set for the negative-temperature preservation typical of artisan gelato.

How can I choose the motor configuration of the case?

The case is available with an internal motor or a remote motor. The internal condenser units are single-phase hermetic as standard, while external units are supplied on request. The choice depends on available space, noise and heat management in the sales area, as well as the distance between case and unit on remote installations.

Which condenser units are provided depending on the remote-motor distance?

The unit configuration varies with power and distance. The 12G model uses a single-phase hermetic unit up to 10 metres and a three-phase semi-hermetic unit over 20 metres. The 18 and 24G models use a three-phase semi-hermetic unit up to 20 metres. This allows the system to be correctly sized to the layout of the premises.

How is condensate water managed?

On internal-motor versions the condensate evaporates automatically, with no drain required. With an external motor, the condensate drain must instead be connected to the sewer line. A condensate evaporation tray is available on request. The front grille is not supplied on unfinished versions or with an external motor.

What finishes and colours can I choose for the front panel and side panels?

The front panel and side panels can be lacquered in RAL shades or in the catalogue colour chart, to match the case to the décor of the gelato shop. The side uprights are in black anodised aluminium and are set up to take laminate panels up to 2 mm thick, widening the scope for aesthetic customisation.

How is the display surface lit?

The shelves are lit by high-luminosity LEDs, which enhance the colours and textures of the gelato displayed in the tubs. LED light delivers an even output with low consumption and heat compared with traditional sources, keeping the product clearly visible without altering its appearance or affecting the preservation temperature.

How can I adapt the case to my gelato shop?

Evolution ice cream can be configured on several fronts: two heights (120 and 137 cm), three nominal widths (1150, 1650 and 2150 mm) and a version with or without side panels.
